of Facility
a. Interior of the facility should be maintained to be dry and
in low temperature. Floor should be dry and no water on the
ceilings.
b. Daily Cleaning & Sterilization: Wall, ceiling, draining
pipe, sewage pipe, dust on exterior of pipes
c. Maintenance, Repair, Clean Up
d. Lighting, Illumination, Ventilation and Circulation of Air
e. Windows and exits should not be open. Make sure that insect
resistance fan is working
f. Animals such as dogs and cats should not be let in
B. Sanitation Management of Facility
and Equipment 1. Installed
equipment should be made with stainless steel or plastic. Wooden
pallets should not be used within meat processing room
2. Hot tub, high pressure washers should be used for cleaning
3. Storage warehouse should be kept clean
4. Maintenance and Repair of Facility and Equipment
Rust on rails and other areas should be removed (Coating should
be avoided if possible) Prevent and remove mold C.
Management of Lighting Apparatus 1.
Regular Cleaning
a. Remove falling prevention cover
b. Remove fluorescent light and clean up
c. Clean the reflection surface
d. Clean the light cover
e. Reassemble 2. Measure illumination twice

of Water and Hot Water Supply Facility
1. What is the source of the water? Tap water, well water, pond
water or underground water
2. Are you doing regular inspection of water quality regularly?
3. Maintenance of water storage tanks and sterilization devices
E. Waste and Drainage Management
1. Disposal of inedible parts
Inedible parts produced from meat processing facility should
be collected in a designated container and kept sealed up. These
parts should be incinerated or carried out to waste processing
plants. Empty container should be sterilized and then stored
2. Management and Repair of Septic Tank
Septic Tank for sewage should be regularly inspected to maintain
purification function. Especially excess sludge should be removed
rapidly |
